Mexican Flare Cauliflower Rice

Are you looking for more ways to get Cauliflower into your diet?  I love the flavor of this recipe. The Mexican flare makes this one stand out from all of the other Cauliflower rice meals I’ve tried before ? How about it are you ready for a little bit of a Mexican Flare.

* 1 head of cauliflower
* 1 tbsp. olive oil
* 1/4 tsp. chili powder
* 1/4 tsp. cumin
* 1/2 tsp. pink Himalayan salt
* 1 large tomato
* 1/4 red onion
* 1 big handful of cilantro

Instructions for Mexican Flare Cauliflower Rice

1. Wash and cut the head of cauliflower and place into a food processor.
2. Next add olive oil, chili powder, cumin and  salt  and pulse only a few times until a rice consistency is achieved.
3. Chop the tomato, red onion and cilantro.
4. Place cauliflower rice into a bowl with all of the ingredients and mix.
5. Garnish with lime and avocado.
6. Enjoy!
