Easy Chicken Fajitas Recipe

While your trying to get healthy a question that might come to mind is are chicken fajitas healthy?  This meal has healthy protein and fresh veggies in one simple dish. When ever I make this meal I still feel like I’m eating healthy. Most of the times I leave off the tortillas that way I’m only getting my veggies. This is one of my best go to meals.

Prep Time: 10 mins
Cook Time: 25 mins

Ingredients

FOR THE FAJITA SEASONING

  • ½ tablespoon chilli powder
  • ½ teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt

FOR THE CHICKEN AND PEPPERS AND ONIONS

  • 2 tablespoon olive oil
  • 1 teaspoon garlic — minced
  • 1.5 lb  chicken breast — cut into thin strips
  • 2 red bell peppers — sliced
  • 2 yellow bell peppers — sliced
  • 2 green bell pepper — sliced
  • 1 medium onion — sliced
  • 1 teaspoon salt and black pepper
  • Avocado slices for topping
  • Cilantro — chopped for garnishing

Fajita Seasoning Instructions

  1. Mixing all the ingredients for fajita seasoning  in a small bowl. Set this aside you will come back to it later.

Chicken and Peppers Instructions

  1. In a bowl, add the chicken that has been cut into strips. Mix in half of the fajita seasoning and place aside for approx 15-30 minutes.
  2. Heat olive oil over medium heat in a large skillet. Add garlic and cook for 30 seconds . Next place the chicken in the skillet and cook for 10-15 minutes making sure it is cooked all the way through. Keep an eye on it and stir occasionally. Set aside to come back to it later.
  3. In the same skillet, use some more olive oil add in all of the veggies.
  4. Stir fry for 5-10 minutes on medium heat. If you want your veggies more tender you may need to add extra time.. Add the chicken back  into the skillet and mix well to combine.
  5. Top with cilantro and slices of avocado. Enjoy!
